- 300 grams oyster mushrooms
- 1 onion
- 2 tsp shawarma seasoning
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 2 pita breads
- ½ cucumber
- 1 handful dill
- 1 handful mint
- 4 tbsp Greek yogurt
- 1 garlic clove
- 2 handfuls baby spinach
Tear or cut the oyster mushrooms into strips and slice the onion into thin rings. Heat the olive oil in a frying pan and fry the onion for about 3 minutes until translucent. Add the oyster mushrooms and fry them for a few minutes over medium heat.
Next, add the shawarma spices and soy sauce and let the mixture cook for another 5 minutes over low heat so the flavors can infuse.
Meanwhile, toast the pita breads in a toaster or heat them according to the instructions on the packaging.
Slice the cucumber thinly and finely chop the dill and mint. Make the garlic sauce by mixing the Greek yogurt with 1 tablespoon of water, the pressed garlic, and the finely chopped dill. Stir everything together well.
Fill the warm pitas with the seasoned oyster mushrooms, baby spinach, cucumber, mint, and a generous spoonful of garlic sauce.
